Step By Step Guide On How To Prepare Coconut Rice

This is a new segment in my blog under lifestyle where we will be sharing food recipes or how to prepare food. This actually happened to be a suggestion made by a colleague of mine. This is just to inspire us ladies/ women on how to cook certain kinds of foods that we do not know how to cook. It is also to inspire ladies and women who do not know how to cook on how to cook and also to inspire the guys to also learn how to cook, especially the bachelors and together, we will inspire one another. *winks* Cos eating out every time is really pretty expensive. Right?

Back to today's post. Preparing/cooking coconut rice is more like cooking joll of rice. The only difference is the coconut water. Instead of using normal water to prepare your coconut rice like you would  for your joll of rice, you use coconut water instead. 

For easy understanding, preparing coconut rice will be divided into 2 sections. 
1) How to prepare coconut water. 
2) How to prepare coconut rice. 
How To Prepare Coconut Water
- Get coconut/coconuts. It could be 1, 2 or 3, depending on how you want it. 
- Break the coconut and throw away the water inside the coconut.
- Remove the coconut from it's shell and blend it. 
- After blending it, boil water. Once the water is boiled, pour the water into the blended coconut.
- Drain it using a sieve. Make sure the water (coconut water) is enough cos that's what you will use to prepare your coconut rice. 

How To Prepare Coconut Rice
Before you start, please do take note that coconut contains oil so that you do not add excessive groundnut oil when preparing the rice. Don't forget, oil/excessive oil is not good for our health and we need to live and stay healthy. 
- Boil your rice. 
This is done by putting your rice inside a pot of water (not the coconut water but ordinary water) and leave to boil. Please do make sure you stir if not the rice won't come out nice. 
- While the rice is boiling, you try and multi-task before the rice gets per-boiled. 
Grill your chicken/turkey/beef if you have not already done that.  Oven cooked foods are one of the healthiest foods to eat. Do find out on ''what you did not know about oven cooked foods'' here >>>   in case you missed it. 
Then while you are grilling your chicken/turkey/beef, start slicing your fresh tomatoes, fresh pepper, green peas, green pepper, onions , carrots and other things you want to include in your coconut rice. Also grind your crayfish. 

P.S-  It is not compulsory you include fresh tomatoes to your coconut rice. This is just if you want to. 

- By now, your rice has already per-boiled.
Drain the water (starched water) from the rice in a sieve and wash. After washing your rice, leave the rice in the sieve for now to drain the water.
- Put small quantity of groundnut oil in the pot. When the oil is hot, pour your sliced onions into the pot and stir.
- Put your sliced tomatoes, sliced pepper and grinded crayfish into the pot and stir.  Leave for a while like 5mins and then add water (your coconut water).
- Add your maggi, salt and other seasonings you choose to add. Allow to boil for 5 to 10 mins. 
- Pour your rice into the pot. 
- Put your sliced carrots, green peas, green pepper, sweet corn and any other thing you feel like adding into your food to garnish the rice, then stir.  
- Wait for 5- 10 mins and viola! the food is ready. The reason why you need to wait for 5 to 10 mins is so that the nutrients in your green peas, green pepper, carrots, sweet corn amongst others are not destroyed. 

P.S- When per-boiling your rice, make sure your rice is half done so that it won't take time before the rice is ready.
